Perfect for a quick breakfast, an afternoon snack, or a dessert treat, banana bread is easy to make and can be enjoyed during any hour of the day. Since bananas are especially difficult to keep fresh in the summer, the number of opportunities to make banana bread during warm weather are great.

The recipe does not call for the addition of chocolate chips, but I topped the loaf with chocolate chips. The chocolate chips can also be placed into the batter. Additionally, I highly recommend enjoying a slice of banana bread with nutella on it.  Trust me, it is delicious.

Recipe:

Ingredients:

2½ cups all-purpose flour

½ cup granulated sugar

½ cup packed brown sugar

3½ teaspoons baking powder

1 teaspoon salt

3 tablespoons vegetable oil

1/3 cup milk

1 egg

1 cup chopped nuts (optional, I did not include nuts)

1¼ cups mashed bananas (2 to 3 medium)

Instructions:

  1. Heat oven to 350° .
  2. Grease bottom only of loaf pan with vegetable oil, 9x5x3 inches, or 2 loaf pans, 8½ x 4½ x 2½ inches.
  3. Mix all ingredients, beat 30 seconds.
  4. Pour into pan(s).
  5. Bake 9-inch loaf 65 to 70 minutes.
  6. Loosen sides of loaf from pan; remove from pan.
  7. Cool completely before slicing.
